Pannu Kakku ‘Finnish Oven Pancake’
1/4 cup Extra Virgin Olive Oil (Butter Olive Oil)
2 cups Hemp Milk or Real Almond Milk
1 tsp. Pure Vanilla Extract (optional)
1 cup Organic All Purpose Flour
1 tsp. Makai Celtic Sea Salt
2 TB “Monk Fruit” natural sugar substitute
Oven temperature 400 degrees. Pour EVOO in 9×13 baking dish set aside.
Mix eggs, milk, flour, salt, and sugar. I used my blender to mix ingredients. Pour batter into baking dish over the olive oil. Oven 400 degrees, bake for 40 minutes edges and top will be flaky and golden brown. It will rise and then fall as it cools.
Cut into squares while warm, serve with Blood Orange Fused EVOO whisked with a little honey, drizzle over Pannu Kakku, and add sliced oranges, a sprinkling of Dawn Spice with slivered almonds to garnish on the side.

Original recipe: calls for 1/3 cup butter melted, instead of extra virgin olive oil; 2 cups dairy milk instead, of Hemp or almond milk; and 3 TB sugar instead, of ‘Monk Fruit’. Monk Fruit is also known as Luo Han Guo.
